As I sit here in my living room listening to the wind howl outside my apartment window, while our Christmas Tree glows in the corner, I find myself thinking about everything that's gone on this year. There have been some super awful times but there have also been a few wonderful moments.

INGREDIENTS
  • 1 box fudge brownie mix
  • 1/4 cup water
  • 1/3 cup oil
  • 1 egg
  • 4 cups semi-sweet chocolate chips
  • 2 (14 oz) cans sweetened condensed milk
  • 1 cup crushed peppermint sticks (candy canes)
INSTRUCTIONS
  1. Preheat oven to 350F.
  2. In a bowl combine the brownie mix, water, oil and egg. Mix well.
  3. Line a 8x8 pan with foil or parchment paper .
  4. Bake brownies for 40 minutes or until done.
  5. Leave them in the pan and let them cool completely.
  6. Bring a small pot filled with 2 inches of water to a boil on the stove top.
  7. Place a metal or glass bowl on top of the the simmer water but don't let the bowl touch the water.
  8. Add the semi-sweet chocolate chips and sweetened condensed milk to the bowl.
  9. Stir until melted and smooth.
  10. Pour the chocolate fudge over the top of the brownies in an even layer.
  11. Top the fudge with the crushed candy cane pieces.
  12. Let the fudge cool for at least 2 to 3 hours before slicing.
